When you mention activity history, I imagine you’re referring to the calls and emails displayed across the timeline and available to search across and dive into? If so, that information isn’t coming from Salesforce but rather directly into Gong. Gong captures the web conferences, integrates with dialer systems and connects directly to the email server in order to ingest and analyze all of these pieces of communication.
